Flank Steak Tacos 

CILANTRO CHIMICHURRI SAUCE 

● 1 cup fresh cilantro, chopped 

● 2 tablespoons red wine vinegar 

● 4 garlic cloves, minced 

● 1 tablespoon dried oregano, or 2 tablespoons fresh oregano leaves 

● 2 teaspoons crushed red pepper flakes 

● ½ teaspoon salt 

● ½ teaspoon black pepper 

● ½ cup extra virgin olive oil 

FOR SERVING 

● 12 corn tortillas 

● ½ cup cotija cheese, crumbled 

● 1 avocado, thinly sliced 

● ¼ cup fresh cilantro leaves, chopped

1lb of Balanced Body Flank Steak 

Assemble the Tacos 

1. Add 12 corn tortillas to the grill and heat them on each side for 10 seconds. Alternatively you can heat the tortillas in a dry skillet on the stove over high heat. 

2. Add the grilled steak to the warm tortillas and top with chimichurri sauce, cotija cheese, sliced avocado and fresh chopped cilantro.
